COFFEE PROFILE
This coffee is very rich and heavy bodied with a unique earthy aroma. Its acidity is delicate with an interesting mineral edge. The coffee finishes with complex chocolate, honey characteristics and classic Sumatran earth and forest nuances.

GEOGRAPHIC PROFILE
Situated 800-1500m (2625-4925ft) above sea level, Sumatra anchors the western most reach of the Malay Archipelago. Positioned directly on the equator, it is the fourth largest island in the world. Whether the soil and climate or the primitive processing methods are responsible, the qualities of Sumatran coffees are truly unique. Coffee from this region is raised on tiny plots scattered over high-terraced clay plateaus, without the benefit of shade or chemicals and using only rudimentary tools. The coffee cherries are handpicked and the beans are removed and left on the pulp-covered ground to dry. After that initial drying, they’re hand washed and a second drying is done to remove their partially fermented parchment. A third drying is done in port, right before shipping.
