COFFEE PROFILE
Similar to its Indonesian island neighbor, Sumatra, but more refined. The Celebes has a heavy body and a crisp acidity. Fruit sweetness and aroma laced with chocolate and pine.

PROCESSING PROFILE
This coffee is processed with a wet-hulled method, where the parchment skin is removed while the coffee is still being dried. So it is partially dried both with and without parchment. This method reduces the coffee's acidity and increases body, resulting in the classic Indonesian cup profile.

THE NAME
This coffee can come under a number of names. Sulawesi is the true name of the island where the coffee is grown. It was renamed Celebes by the Portuguese and has been known as Celebes for much of its coffee exporting days. Because of the long association with the coffee trade, Celebes is allowed as "coffee correct."
